This upcoming weekend is Memorial Day weekend, or in Minnesota, the kick-off to Summer. We not only use this weekend to remember those who died while serving our country, but we also use it to connect with friends and family, pot our plants, take out the patio furniture from the garage, open our pools, take our inaugural pontoon ride and grill a feast for kings and queens. So what are you bringing to this year’s Memorial Day picnic?
Quick, quick, quick!! That’s what these Stuffed Breakfast Buns are. And, let me be honest, that’s what I need these days. Once upon a time, there was only Chris and me and we only had to worry about getting ourselves up and out the door in the morning. Fueled by extra large, extra dark coffee and that sort of energy that only seems to be reserved for twenty-something professionals. Now-a-days, our morning routine looks a little different. It’s still Chris and me trying to get up and ready, but add in one 26-year-old brother and a one and a half-year-old to wrangle and mornings feel a little bit more like a mad dash to cram food in faces and get out the door (hopefully) with the same two shoes on.
Yelling. Lots of yelling. Sometimes a positive “YES!!!!!” Sometimes a negative “no. no. No. NO!! NOOOOO!!!!” This is how I remember popovers being made when I was growing up. Getting ingredients to work together to pop-up in a beautiful, fluffy way can be completely magical and, often times, a complete disappointment. No matter how they turn out…to me at least…popovers are my mom’s thing.
Ok, so first of all, we have to apologize for being absent lately. I’d like to give you all kinds of fabulous, exciting reasons for this like – being asked to appear on the Ellen Show or winning a gagillion dollars or not having internet access while hiking through the Andes – but unfortunately, no, we don’t have any great excuses other than being moms and being busy working gals and doing the holiday shuffle to several family events. All fairly typical, albeit, mostly reasonable excuses. That’s all we got folks! We are sorry.
It’s officially spring in Minnesota, which, for my family, means the start of grilling season! We bust out the patio furniture and start planning what delicious things we are going to grill up this week. This week, with some of the first warm, sunshiney evenings we’ve had in a long time, we are grilling up flank steaks seasoned with cumin, lime, onion and chipotle pepper for grilled steak fajitas.
Chad and I are attempting to cut foods out of our diet, eating as “clean” as we can. This charged, “fad” word can have different interpretations and can certainly be confusing. All I know is that you can still eat steak.
