This upcoming weekend is Memorial Day weekend, or in Minnesota, the kick-off to Summer. We not only use this weekend to remember those who died while serving our country, but we also use it to connect with friends and family, pot our plants, take out the patio furniture from the garage, open our pools, take our inaugural pontoon ride and grill a feast for kings and queens. So what are you bringing to this year’s Memorial Day picnic?
In my family it would traditionally be potato salad (possible future post) which I could argue is THE BEST potato salad around. But this year I want to enjoy every minute outside, planting my feet in the grass and the flowers in their beds. I want to watch Elliot play with the hose and then read books on a blanket while basking in the sun. I do not want to spend that time boiling potatoes…at least not right now during the kick-off to summer. Here enters the Caprese Salad.
Usually assembled on a bed of greens with large slices of mozzarella and tomatoes, this delicious summer salad is what dreams are made of. Well, at least Chad’s dreams (see The Cheese House that Chad Built). This easy, elegant salad is near and dear to my heart as it is Chad’s favorite. Making it for him is like silently saying, “I really like you…here is your favorite salad.” You know what I am talking about. Right? It’s that small gesture that you do for someone just because you know they will love and appreciate that act of kindness without even saying a word. It is usually something small like when Chad brings flowers home for no reason or when I make the bed in the morning. 🙂 These acts are specific to that person; emphasizing how you know them, how you love them, and how you want them to know you love them. Making caprese salad fits into this category. What can I say…the man loves tomatoes and mozzarella.
I don’t have the patience, or the knife skills, to put together a beautiful platter of caprese so I do more of deconstructed caprese. Still delicious, still pretty and still a hit at all Memorial Day celebrations. Enjoy this dish. Enjoy your time with family. Enjoy summer! Happy Memorial Day Weekend!!
(Deconstructed) Caprese Salad
1 ball of Mozzarella Pearls (you can also cut a large ball into smaller pieces)
3/4lb – 1lb Tomatoes (I use small ones – typically a variety of color).
6 Basil Leaves
2 Tbsp Olive Oil
Drizzle of Balsamic Vinegar
Salt and Pepper to taste
Cut tomatoes into quarters. Put into a bowl with mozzarella pearls. Chop the basil and add to the bowl. Add olive oil and mix together. After everything is coated in oil, drizzle balsamic vinegar, salt and pepper to taste. Serve immediately.
